Americans eat an average of 18 pounds of meat per person every year, in part because it’s a big part of a healthy diet. But that’s not the only reason it’s a staple of the American diet.

More than half of the protein in our food comes from meat. According to a new study in the journal Nature, there’s a lot that’s been misunderstood about the role meat plays in a healthy diet.

One misconception is that animals are more nutritious than plants. In fact, plant-based diets tend to be lower in saturated fat, salt, and cholesterol, but they also tend to be higher in carbohydrates. In other words, they’re more high-fiber, more plant-based foods that we think of as “healthy.”

People who eat meat tend to also be more likely to have diets high in saturated fat and cholesterol. But there’s a more complex picture to the relationship between meat and heart health. And the recent study reveals an important part of the story that you might not have known.

The researchers examined data from more than 200,000 Americans who participated in the National Health and Nutrition Examination Survey. They found that even after accounting for all that, people who ate the most meat also had the most cardiovascular disease.

And it wasn’t just a matter of a few extra slices of bacon. They also found that people who consumed more red meat, chicken, and pork had higher cholesterol and triglyceride levels.

The real culprits are, quite simply, saturated fat and cholesterol. And it’s hard to get both of those from plants.

“Red meat is not ‘heart healthy,’ ” said corresponding author Dr. Vinay Prasad. “In fact, it is quite the opposite. We found that the more red meat you ate, the more likely you were to have high cholesterol and high triglycerides, the two risk factors for cardiovascular disease.”

As the researchers noted in an editorial, when it comes to meat, “The choice of the term ‘heart friendly’ is inappropriate given current findings.”

There’s no reason to worry about getting too much meat, though. According to the researchers, the average American ate enough to meet the World Health Organization’s guideline for a healthy diet of around two servings a day. It’s not a bad place to be.
